Creamy Bacon Parmesan Salad

My family loves to throw down on the grill while I’m inside preparing sides dishes, baked goodies, and appetizers. Sides are often hard to prepare so I decided to help you get ahead when planning your next family gathering. Your guest will be raving and returning for seconds after they try this delicious Creamy Bacon Parmesan Salad. This is a dish you can prepare that would go with any meat you desire or enjoy alone as a main course.

Ingredients:

1 lb shell pasta
1 1/3 cup mayo
3/4 cup parmesan cheese; shredded
1/2 cup frozen peas
1 lemon; juiced
4 slices of bacon; cooked and diced
2 teaspoons salt
2 teaspoons pepper
1/3 cup chopped Italian parsley

Instructions:

  1. Boil pasta as directed on package. Add frozen peas in the last few minutes of boiling. Strain shells and peas. 

  2. Wash and strain with cold water to cool down the pasta and peas. Pour into a large bowl. 

  3. Juice lemon. Stir in mayo, lemon juice, and lemon zest. Add parmesan, salt, and pepper. Toss well.

  4. Top with bacon and parsley.

  5. Toss well.

  6. Place in fridge until ready to serve.
